Teochew Style Steamed Chinese Pomfret | 潮州蒸斗鲳

1 Chinese pomfret fish (washed)

Pork broth

50g salted veggy (sliced)

Shiitake mushroom (soaked and cut into thin slices)

1/2 tomato (cut into small pieces)

Green onion

Ginger slices

Red chillies (cut into thin slices)

Fried garlic

Pork lard (optional)

1 capful of fish sauce


1. Prepare a steaming plate. Arrange green onion at the base, followed by the salted veggy. Add fish on top. Put salted veggy and the water from the salted veggy on the side.

2. Put the tomato and mushroom around. Put the few slices of ginger inside the fish cavity.

3. Put the pork lard (optional).

4. Pour pork broth and shiitake mushroom water.

TIPS: You can add plum and tofu as well.

5. Prepare a pot of hot water for steamer. Put the fish in the steamer. Close the lid, turn the heat to medium high heat and let it steam for 7 minutes.

6. Remove the fish from the steamer. Do a final seasoning with fish sauce, fried garlic, and 1 thin layer of garlic oil (optional).

7. Serve it.
