Steamed Snapper with Ginger Paste 姜蓉蒸红枣鱼
Cooking Time: 10 Minutes
1 snapper fish (500g) (wash thoroughly, rub the body with salt and cut few slits)
Chopped green onions
1 cup of chicken stock
1. Cut the ginger into smaller pieces and blend it in a blender. For finely blended ginger, add a bit of oil and water, and blend for a few seconds more.
TIPS: Young ginger is for flavour and fragrance, old ginger is for heat and spiciness.
2. Prepare a boiling pot of water and put the fish on the grill over the water. Close the lid and adjust the heat to medium fire. Steam it for 8 minutes.
3. While waiting for the fish to cook, heat some oil in a different pot. Add the blended ginger and fry it for 2-3 minutes. Add the green onion and chicken stock. To season, add a bit of salt, sugar and fish sauce. Mix well.
TIPS: Chicken stock will enhance the flavour of fish.
TIPS: Use a sharp stick to insert into the fish to check if it is cooked or not.
4. When the fish is ready, remove it from the steamer. Transfer the fish onto a new plate and discard the water that was on the steamer plate. Pour the ginger paste over the fish and it is to be served.
