Snapper Fish Head Stew 红烧鱼头

Snapper fish head

Green onion (white portion)



Red chillies

Egg yolk

Pork lard (optional)

Chinese cabbage

Soya sauce

Salt and sugar

Fish sauce

White pepper


1. Apply egg yolk on the body of the cleaned fish. Cut a few slits.

2. Heat up some oil in a pan. Pan-fry the fish for 4-5 minutes. Add more oil plus pork lard in the pan.

3. Add ginger slices and garlic. Saute them for a while.

4. Add green onions and stir everything as it cooks.

5. Pour some hot water into the wok. Then add red chillies.

6. Drizzle some soya sauce. Close the lid and let everything simmer for 3-4 minutes under high heat.

7. Add in Chinese cabbage. Close the lid again and simmer for 4-5 minutes.

8. Season with some salt, sugar, fish sauce and white pepper.

9. Garnish with green onion and chillies. Serve hot.
