Quick Fried Green Onion with Prawns 葱爆明虾

INGREDIENTS
Prawns (deveined, front part of the prawns removed, coat with cornstarch)
Chopped green onions
Ginger slices
Chopped garlic
Cornstarch
1 tablespoon dark soy sauce
1 1/2 tablespoon light soy sauce
1 teaspoon fish sauce
Salt
1 tablespoon sugar
1 teaspoon tomato sauce
1 teaspoon oyster sauce
1 tablespoon Shao Xing wine
2 tablespoons hot water
STEPS
1. Prepare a wok of hot oil. Deep fry the prawns in high heat for 3 minutes.
TIPS: Soak up excess oil from prawns using a kitchen towel after frying.
2. Make the sauce by mixing 1 tablespoon of dark soy sauce, 1 1/2 tablespoon light soy sauce, 1 teaspoon fish sauce, salt, 1 tablespoon sugar, 1 teaspoon tomato sauce, 1 teaspoon oyster sauce, 1 tablespoon Shao Xing wine and 2 tablespoons hot water. Mix well.
3. Put some oil into a cold wok and slowly raise the temperature. Once hot, saute the ginger slices until fragrant. Then add the green onions and the garlic.
4. Add the sauce mixture. Stir fry for a while.
5. Now add the prawns and give everything a few quick tosses.
6. Serve hot.
