Prawn Oil and Prawn Broth
Cooking Time: 10 Minutes
1. Heat oil to high heat in a wok. Carefully add the prawn shells to deep fry it. Stir continuously until the shells are fully cooked. Remove the shells from the oil after frying for almost 3-4 minutes.
TIPS: Remove the eyes and front part of the prawns to reduce oil splatters.
2. Add a cup of hot water into the wok of fried prawn shells. Let it boil for 30-40 seconds until the water turns to orange in colour. Add 1-2 ginger slices if necessary.
3. Remove the prawn shells. The prawn broth is ready now.
