Golden Salted Eggs Prawns 黄金咸蛋虾

Corn starch

Chopped garlic

Chopped bird's eye chilli (cili padi)

2 egg yolks from salted eggs

Egg whites

Curry leaves


1. Coat a thin layer of corn starch on the prawns. Deep fry the prawns in hot oil for 3 minutes until the prawns turned reddish in colour.

TIPS: Corn starch is used to absorb excess water and helps to protect the shape of the prawns.

TIPS: Cut off the sharp portions from the prawns.

2. Pour some oil in a heated wok. Put garlic, cili padi, curry leaves, and stir well. Put in egg yolks and egg whites. Stir again. 

3. Add the prawns and stir continuously so the prawns can be evenly coated with the salted eggs mixture. Sprinkle a bit of salt and sugar for taste.
