Deep Fried Barramundi Fish Tail

Barramundi fishtail (cleaned, cut few slits across)
STEPS
1. Pour some oil into a wok and raise the temperature to high. Deep fry the fishtail for 4 minutes each side until it becomes golden brown in colour.
TIPS: Wipe the moisture from the fish and use a spatula to place the fish into the wok. Use a spatula and a spoon to flip the fish after 4 minutes.
2. Use a spoon and a spatula to hold the fish upright so you can deep fry the middle part of the fish for 1 minute.
3. Serve it with soy sauce or belacan sambal.
TIPS: Soak up excess oil from the fish using kitchen absorbent paper.
