Cooking Ah Pa - XO Sauce Stirfry Mixed Vege and Prawns

INGREDIENTS

Big prawns (deveined, shells removed, leg cut, eyes removed)

1 1/2 tablespoon XO sauce

Celery

Kailan stem slices

Green, yellow, red capsicum (chopped)

Onion (chopped)

Soya sauce

Salt and sugar

White pepper

Starch solution


STEPS

1. Prepare prawn oil and prawn broth. (Refer to my prawn broth and oil recipes).

2. Pour some prawn oil in a wok. Start with stir-frying the onion and garlic. 

3. Add some XO paste. Stir well.

4. Now you may add all the vegetables. Mix everything well. 

5. Add the prawns and lightly cook them.

6. Pour in the prawn broth. Close the lid and let everything simmer for 3-4 minutes.

7. Add a bit of salt, sugar, soya sauce and white pepper as seasoning.

TIPS: Amount of salt added equals to sugar. The ratio is 1:1.

8. Turn off the fire and add the starch solution to thicken the gravy. Stir well. Serve with the remaining XO sauce and some prawn oil.
