Cooking Ah Pa - Steamed Pomfret Fish Teochew Style

INGREDIENTS
1 Chinese Pomfret fish (cleaned, cut a few slits on the body)
Pickles
Tofu
Tomato
Sour plums
White pepper
Pork broth
Garlic oil
Cilantro (garnish)
Soya sauce
STEPS
1.Arrange tofu, tomato, pickles and sour plum nicely on a steaming plate
2. Bring the water to boil in a steamer. Place the fish on a plate and steam it in the steamer for 2-3 minutes with the lid closed. Once done, take out the fish and discard the fishy water.
TIPS: Make sure the fish is completely defrosted/ at room temperature before steaming. A frozen fish may take 2 hours to defrost completely.
3. Transfer the fish to the earlier plate with tofu and tomato layers (in step 1). Add the pork broth and soya sauce.
4. Place this fish in the steamer again and steam for 5 minutes.
TIPS: Poke a chopstick through the thickest part of the fish. Place the same end of the chopstick between your upper lips and nose. If it is warm, the fish is fully cooked.
5. Add garlic oil and garnish with cilantro.
TIPS: Precook the tofu first to reduce cooking time.
