INGREDIENTS
2 Barramundi fish cutlets
Homemade garlic oil
Soya sauce
Green onions (chopped and soaked in cold water)
STEPS
1. Prepare a pot of boiling water in a steamer. Put the fish in the steamer, close the lid and let it steam for 7 minutes.
TIPS: Make sure the fish is 100% defrosted before steaming. Thaw the fish at room temperature inside a plastic to prevent oxidisation. It is advisable to take the fish out of the freezer for about 3-4 hours prior to cooking time.
2. Remove the fish and discard the fishy water.
TIPS: Poke a chopstick through the thickest part of the fish. Place the chopstick between your upper lips and nose. If it is warm, the fish is fully cooked.
3. Transfer the fish to another plate. Top it with homemade garlic oil. Garnish with green onion and add some soya sauce.
TIPS: You can keep the garlic oil in the fridge for 2-3 weeks. Use a clean spoon each time to avoid contaminating the whole jar of garlic oil.
