1/2 Barramundi fish (cleaned)
Garlic
Ginger
Garlic oil
Black fermented beans
Red chillies
Green onion
STEPS
1. Boil water in steamer. Once the water is boiling, place the fish inside the steamer. Close the lid and let it steam for 7 minutes.
TIPS: To choose a fresh fish, check the eyes. It must be crystal clear. The gills should be reddish in colour and the body should be firm.
2. Put some oil in a pan together with garlic oil. Saute garlic, ginger, black fermented beans and red chillies. Sprinkle a pinch of salt and sugar plus some soya sauce and hot water. Stir it.
TIPS: Natural MSG can be used, for example, dried fish powder and dried mushroom powder.
3. Discard the fishy water from the steamed fish. Transfer the fish to a different plate.
4. Pour the sauce mixture over the fish. Garnish with some green onion slices and serve.
