Cooking Ah Pa -- Fragrant Prawn Oil
Cooking Time: 10 Minutes
1. Heat some oil in a wok. Once the oil reaches above 160 degrees Celcius, it is hot enough.
TIPS: You can see the smoke swirling above the oil if the temperature is high enough.
2. Toss in the prawn shells. Stir it. The oil will start to turn orange in colour.
TIPS: You can remove the eyes of the prawns to avoid splattering of oil.
TIPS: Prawn oil can be used to fry rice. This gives your fried rice a fragrant flavour. It also can be used to cook fried eggs.
TIPS: Prawn oil can be kept for 2-3 days.
3. Remove the prawn shells. The prawn oil is ready.
