INGREDIENTS

5 pieces of fish maw (soaked 2-3hours)

6 shiitake mushrooms (soaked 1-2hours) 

5 sticks dried bean curd (soaked)

6 prawns 

1 bowl of roast pork

1 can of abalone (braised)

2 dried scallops (soaked)

1 cabbage (slices)

1 carrot (thin slices)

1 broccoli/cauliflower 

1 bowl chicken stock

1 tablespoon oyster sauce

1 tablespoon abalone sauce

1 teaspoon light soy sauce

Salt, sugar (seasoning)

Starch

Oil

STEPS

1. Fill the pan/wok with water and bring to boil. Sprinkle a bit of salt and oil into the boiling water. Proceed to blanch the vegetables (broccoli, cabbage, and carrot) for about 2-3 minutes. Repeat the same process with the prawns, fish maw, dried bean curd, and shiitake mushrooms.

TIPS: Identify the basin or pot to be used for the dish. The chosen pot must be suitable for cooking as well as for serving. Suggested types of pots are big metal basins, steamboat pots or clay pots.

2. In the pot, start the layering as follows; cabbage, dried bean curd, fish maw, carrot, broccoli, abalones, prawns, shiitake mushrooms and lastly the roast pork.

3. In a different pan/wok, pour in the chicken stock followed by oyster sauce, abalone sauce and water from the scallops. Add some seasoning as well as the abalone water from the canned abalone. In a separate bowl, mix the starch with a few drops of water. Stir well until it is well combined with no lumps visible.

4. Pour the starch mixture into the broth and stir well under medium heat. Then pour the broth into the pot (where the ingredients were laid out earlier) and bring it to boil for about 5 minutes.

5. Your Poon Choy is now ready to eat!
